Batch 62: Alt
It's alt season again, and this time I think I have a pretty good
Uerige clone recipe.
Recipe
Grain Bill
- 17 lbs, 10 oz. Durst Pilsner
- 8 oz. Weyermann CaraAroma
- 4 oz. Weyermann Carafa III
Hops
- 6 oz. Spalt (4.2% AA) @60 minutes.
Yeast
Wyeast 1010 American Wheat, 1L starter plus 1L step-up wort, stirred.
Mash
Single infusion, 60 minutes at 153F.

Timeline
Brew day: October 24, 2005
- 1:00 pm: Start heating water
- 1:45 pm: Water at 168F.
- 1:50 pm: Mash-in at 162F? 6 gallons of water.
- 1:53 pm: Temperature stabilizes at 153F.
- 2:53 pm: Start first runnings (done at 2:56)
- 3:00 pm: Added first sparge charge.
- 3:10 pm: Stir, 3:15 start second runnings.
- 3:22 pm: Added second sparge charge.
- 3:32 pm: Stir, 3:37 start last runnings.
- 3:42 pm: All on to boil.
- 3:50 pm: Boilover!
- 4:24 pm: Add hops.
- 5:24 pm: Flame-out/chill.
- 5:38 pm: Transferred, 4.5-5 gallons in two buckets, 65F.
- 6:06 pm: Pitched yeast.
Fermented in low-mid 60s, racked to keg 11/05.
