Batch 66: Freezer Burn Sky Pee Ale
I hadn't done a really hoppy beer in a while, and
had a large stash of hops languishing in my freezer
from my brewing hiatus. The then-recent issue of
Zymurgy had an article on late-hopping, or moving
most of the hop bill to the last 15-30 minutes of
boil for more flavor.
It was a perfect storm -- double IPA! I did go a bit
overboard on the hops though. Yes, that is over a pound
and a half in this 5 gallon batch :-)
Recipe
Grain Bill
- 12.25 # Durst Pils
- 5.75 # Moravian Pils (?)
- 12 oz. Dingemann's Aromatic
- 4 oz. Weyermann CaraAroma
Hops
- 2 oz Nugget (13.7% AA) @ 60 min
- 4 oz Nugget (13.4% AA) @ 15 min
- 8 oz Northern Brewer (8.2% AA) @ 15 min
- 2 oz Hallertau (4.2% AA) @ 15 min
- 4 oz Glacier (4.9% AA) pellets @ 5 min
- 4 oz Crystal (3.4% AA) pellets @ 5 min
- 4 oz Spalt (4.2% AA) @ 5 min
- 1.3 oz Northern Brewer at flame-out
Yeast
Safale US-56
Mash
Single infusion, 90 minutes at 156F
Vitals
- OG: 1.092
- FG: <1.030
- Calculated IBUs: verybignumber
- Carbonation: forced CO2
Timeline
Brew day: April 30, 2006
- 11:45 am: Start heating water
- 12:45 pm: mash in (5.5 g 167F water => 156F)
- 2:15 pm: Add 1g sparge water
- 2:30 pm: Start first runnings
- 2:33 pm: Underlet sparge water
- 2:50 pm: Second runnings on to boil
- 3:00 pm: All 8 gallons on to boil (eek!)
- 4:20 pm: Out of gas, boil stopped; down to 6.5-7g
- 4:35 pm: Add first hops
- ...all other additions to schedule, no whirlfloc
- 5:35 pm: Flameout and chill
- 5:45 pm: Done
- 6:15 pm: Pitched.
